Eating greener, reducing waste and getting the most out of our ingredients. In our Sustainable Celebrations class we invite you to learn to do the same.We will start with a chicken, boned, cherry stuffed , rolled and roasted. We will make a jus using the bones, crackle from the skin and we’ll confit the wings for good measure using duck fat.The duck fat will also be used for crispy classic roast potatoes. But fear not - the potato skins will be put to good use!
